Hey, how you doin’? 😉 It’s rainy and gloomy in Bergen all over again, but I don’t care this time (strong self motivation over here, haha). I hope you are having a nice Saturday, if not – I suggest doing this parfait for a snack (I know, the title says breakfast, but… it could actually be a late breakfast/snack in my defense! 😛 ). It’s like summer in a jar!
I had this beauty yesterday and I was so pleased with all the flavors. Chia seed pudding, layered with mango chunks, and mango-avocado cream. #happybellygoals
Again, I tried a recipe from the Healthy Happened book, and it is amazing! This time it was mango & avocado cream, and to be honest, I did not expect this combo to taste that good! So…shall we?
Mango/avocado cream(serves 2):
- 1 mango
- 1 avocado
- juice of a freshly squeezed lemon (1)
- ¼ of a cup (60ml) of a plant based milk or water
- 1-2 tbsp maple syrup or 2 dates (optional)
Put peeled mango, avocado, fresh lemon juice and plant based milk or water in a food processor. Blend them together until the mixture is thick and even. Taste it, and then, if you need it – now is the time to pour in the maple syrup or add the dates (for the sweetness). Process again until smooth, and voila!
So I took the cream, some chia pudding (which I prepared a night before), some chunks of mango and layered it as a parfait. Solamita (the girl behind the Healthy Happened) suggests another type of layered chia pudding goodness – with some orange flavored granola! (That is on my to-do list, for sure 😉 ) Oh, I wish I had this in my fridge right now…
