Happy lazy Saturday! I wanted to say Saturday morning, but it’s kind of too late for that, isn’t it? 😀
Yesterday my husband and I watched Home Alone 2 – I don’t know what it is about this movie, but it surely kicks the Christmas feeling into you. And I think, that I am ready for snow now, so bring it on! *looking hopefully at gray, rainy skies*
Today we slept in. And it was amazing! I am actually the kind of person who likes to wake up earlier, so I can do more, and that way I feel more productive. But sleep and rest was on today’s to-do list. And pancakes! Healthy, fluffy, tasty pancakes. Do you remember a two ingredient pancake recipe that was trending some time ago? Well, every time I tried it, it was a disaster. I could not flip the pancakes properly without not damaging them, or they tasted more like egg omelette more than actual pancakes – because surprise, surprise – the two ingredients are eggs & bananas. But I winged the recipe my way. So if you want some yummy pancakes for a late Saturday/Sunday morning – here you go:
Banana pancakes (serves 1)
- 1 large banana (or 2 smaller ones)
- 1 egg
- 2 tbsp spelt flour (heaped tablespoons)
- 1/2 tsp baking powder
- pinch of cinnamon (optional)
- 1 tsp chia seeds (optional)
Slice banana in pieces and mash it with a fork. Add egg and beat well together. Add the rest of the ingredients – spelt flour, baking powder, cinnamon and chia seeds, mix well. Cook the pancakes in a frying pan – I use coconut oil for that – on medium heat. Serve with toasted almond slices, shredded coconut or jam of your choice. Oh, and coffee on the side.
p.s. Let me know if you try them! They are really very good and easy to make.
The reason I call them healthy pancakes is that I do not add sugar to the mixture at all. They get all the needed sweetness from a banana. Also, I use spelt flour – which is actually better for you than the regular wheat flour. If you are interested, here & here are some articles about it.
