Some Mondays are better than others… Can you guess which one I am facing today?
When this happens it’s time for some comfort food. Somehow, it always helps.
I am talking sweet potato fries. Baked. Served with avocado mash. Ready in 30 minutes. Only very few ingredients that are easy to combine together, and soooo so good. Not only for your belly, for the soul as well 😉 Are you interested already?
The recipe is for one person:
Sweet Potato Fries:
- 1 medium sized sweet potato
- olive oil (not extra virgin)
- sea salt
- ground black pepper
- herbs (Provence mix, or similar)
Wash sweet potato(I leave the peel on) and cut it in sticks – usually I do not try to make them even, that’s the beauty of it. Put them in a bowl and season with olive oil, sea salt, pepper and herbs. Spread the fries on the baking tray (covered with the baking sheet). Bake for 25-30 minutes at 200°C (heating – both, upper and lower section). When the fries are almost done – 3-5 mines left – I put on a grill function (heating from above), at 240°C – for that extra crispiness. Voila!
I serve them with avocado mash. I don’t think you need a recipe for that – it’s basically mashed avocado with some sea salt and ground pepper.
P.S. I also think they would go nice together with some feta-type cheese, sprinkled on top.
