Mindful snacking: Healthy energy bites

I have a recipe for you that I swear by – energy bliss balls. It’s the perfect snack if you are a sweet tooth like me, or if you just feel like… snacking. These energy bites are made of natural ingredients, are packed with nutrients, and the best part – there is no refined sugar in them. Win win!

Energy Bliss Balls 

  • 150 g. Medjool Dates *
  • 1 tbsp chia seeds
  • 1/2 cup almonds
  • 1/2 cup hazelnuts
  • 1 tsp vanilla extract
  • pinch of salt
  • 2 tbsp melted coconut oil
  • 2 tbsp raw cacao powder
  • chopped pistachios for coating **

Process the nuts in a food processor until chopped. I like to leave some chunks for the extra crunch. Place in a big bowl. Process dates, chia seeds, vanilla extract, salt, cacao powder and melted coconut oil together until the mixture is smooth. Add to the bowl with nuts and mix them well together. Add more coconut oil if the mixture is too dry. Form mixture into balls and coat them in chopped pistachios. I like to wet my hands(not too much!) before doing that as the mixture is a bit sticky. Place in the fridge for at least half an hour and enjoy. And remember – one ball can have as much as 100 kcal in it. So be careful with that snacking.

* – look for the fresh dates, not the ones preserved in syrup – we want to avoid all the unnecessary sugar. They can usually be found in the refrigerated area of fruits and vegetables.

** – use shredded coconut, other chopped nuts, seeds – whatever you prefer.

Also, I usually make them only with almonds. It was only this time that I tried the original recipe.
